Morioka's signature cold noodles were invented by a Korean immigrant in 1955, and Pyonpyonsha has perfected the art over decades. Translucent, impossibly chewy noodles sit in a rich chilled beef broth topped with watermelon (summer), kimchi, and sliced egg. The factory workshop next to Morioka Handi-Works Square lets you make your own noodles from scratch.
